Some nights, I just want to chill out and not fuss over dinner. Those are usually the nights I make nachos, or occasionally, microwave popcorn. Just being honest folks!
I’m well aware that those are NOT healthy choices and sort of undermines what I do all week long food wise, so when Sunday night was turning into one of those evenings, Hubby suggested just ordering a pizza. I was like, nooooo …. we really need to be saving money and well, ordering pizza was just NOT what I wanted to spend my last $20 on!
So I got off the couch and grabbed a loaf of french bread from the freezer, a jar of pizza sauce from the pantry, and a package of pepperoni and a bag of shredded cheese from the fridge.
Frugal Tip: Buy the marked down bread, place in a plastic shopping bag and toss in the freezer! Perfect for last minute bruschetta, garlic bread, or, in this case, PIZZA BREAD!
This is also a great thing to teach college kids to make … it’s one of the things the Boy made a few times with good results 😉
Here’s what you need:
Loaf of French bread, cut in half and then sliced in half again. IF it doesn’t sit flat on the bottom, trim so it does
Pizza sauce (I am really stuck on this Trader Joe’s version)
Pepperoni (again, Trader Joe’s)
Shredded mozzarella cheese (I had 2 bags but only needed one)
Heat your oven to 400 degrees.
Line a large baking tray with parchment paper for easier cleanup.
Place your bread on the sheet.
Spread a generous amount of pizza sauce over the top of bread. I just used a large spoon to do so.
Top the sauce with a generous amount of cheese, spreading it out. NOTE: if you use too much cheese, it will melt and run off the bread making you very very sad
Grab a bottle of Italian Seasoning from your spice rack if you have it …
Sprinkle the cheese with the seasoning IF you have it … if not, no worries
Now lay on your pepperoni
and add on just a little more cheese over the top
And then bake for 15 minutes of so until the cheese is melted and all bubbly …
This was a quick, frugal and satisfying dinner! I served a garden salad along side (iceberg lettuce, sliced cucumbers and sliced red peppers) … I’m thinking I need to put this on my meal rotation list!
