Menu Plan & Meal Prep

Still here in NW Indiana … NO internet to be provided to the house as of yet. Good grief. I ended up going to Verizon in town and just buying a pay as you go phone with hotspot as our little jetpack bit the dust and it was more expensive to buy a new one of those than an actual phone. AND it’s cheaper on a per month basis so I figured what the heck … at least I’ll have a phone that works here too …

And that, my friends, is not so very frugal and it will show up on the Frugal Activities report later this week so check back …

Otherwise, everything is just fine!

Cold? Yup!
Snow flurries? Yup!
Laundry mat? Yup!

Just like the old days! What’s not like the old days is the menu planning and meal prepping! Never did that when I was younger … my parents would get paid on Friday, so we’d do Friday night at Shakee’s, Saturday night at Red Lobster, Sunday night at Arbies, Monday at McDonalds or KFC and then Tuesday, Wednesday and Thursday would be the boxed macaroni & cheese and some other weird stuff (that toast with meat and gravy over the top) … so glad I grew up and figured out what good food really is and how it’s much kinder to your body!

Halloween is Tuesday. My favorite holiday but this year we
are way out in the country and I certainly don’t expect any Trick or Treaters
to be knocking on the door. I’d be more worried about those damn coyotes that
are wondering around than candy if I was a kid!

Here’s what we are looking at for the week!
Saturday – out with a group of old friends. We always have
such a great time and I never know WHERE we are going to go! Last year we ended
up at a distillery in Michigan!
Sunday – pot roast in the crockpot. My brother in law gave one to us last week from his freezer in a feeble attempt to make room for deer season as that ½ cow has taken the WHOLE freezer!  Another recipe that I need to share with you! 
Monday – grilled cheese and tomato basil soup. It’s a little chilly here! I need to share my recipe with you for this too so hopefully I’ll get some sunlight while cooking and be able to share the soup!
Tuesday – Taco Tuesday, of course! I was thinking I’ll make a batch
of Taco Soup with some cauliflower rice BUT then I see that Black Bean Soup popping up! 
Wednesday – Shallot Chicken (with dehydrated onions) and
veggies with a garden (iceberg) salad (although I heard that my niece will most
likely be in town so we might be at someone else’s house for dinner)
Thursday – leftovers!

Friday – out!
