Hey, let’s take a walk down memory lane and do a Menu Plan for the week ahead!
Ha. Sorry. It’s just been quite a while since I’ve done a real menu plan, I’ll admit it. Hubby’s currently medical situation has really turned a lot of things upside down and food has certainly been the #1 thing.
He goes in for treatment #3 on Tuesday and just told me this evening that he’s very nervous about this one for some reason. I would make a safe guess it’s because he flies out on Friday morning and well, what ifΒ he does feel like crap?? Then what?
It will be fine. I told him so, therefore, it will be. π
I’m trying to do a little mini-pantry/freezer challenge this month as well … to save a little money and to clear out some of the clutter food stuff we have hanging around too!
Here’s what we are looking at for the week!
Saturday – bacon and mushroom burgers on the grill with a wedge salad (we did stop and pick up the ground beef)
Sunday – Lemon Basil Chicken Thighs and Roasted Potatoes (chicken in freezer, taters from Trader Joe’s several weeks back) … recipe coming soon on the other blog!
Monday – Takeout Fakeout (will use the Mandarin Orange Chicken and Veggie Fried Rice from freezer – Trader Joe’s)
Tuesday – Hubby will either be on a feeding frenzy or a food boycott … I just don’t know as first time, no food, 2nd time, couldn’t eat enough and this time (3rd time) we have no idea what to expect! Grilled cheese and tomato soup for all
Wednesday – going with a Wingin Wednesday theme and cooking up some wings. Wings are in the freezer (Costco) and balance of ingredients in pantry and fridge

Thursday – Hubby will be disconnected from his 48 hour infusion so hopefully he won’t feel too bad … he needs to eat as he flies out early in the morning so I’m going to see what he wants (that we have on hand!) and let him choose
Friday – I’m a single girl this evening and I think I will make some Steak Bites as it’s been a long time, hubby can’t really do steak any longer AND I have some NY Strips in the freezer to use up …

The Island Pork is actually a P90X recipe. Some of the recipes have turned out to be tasty, surprisingly enough! I will have to make a point & get some more posted soon.

Your menu sounds great! I love your blog by the way! π Been a lurker lol!This pizza crust is awesome. It's no knead and it's pretty light if you roll it out thin. I use storebought crust for most but this reheats really well and I always use it.http://allrecipes.com/Recipe/Quick-and-Easy-Pizza-Crust/Detail.aspxI always end up missing something for my cookaheads, it always goes like that lol. I do a big restock in the beginning of the month and add to what we lack as the month goes on. Not that I'm a picky eater…nooo lol. π

I'm doing a pantry/freezer clean out as well, and so far I can't tell a difference. Which I think has to do with the fact I'm cooking for one instead of a family. But I'm making progress, I guess. Hopefully, this week I'll make a real dent.I use KAF pizza dough recipe. Hi Elizabeth! Yes, I know what you mean … IF I was feeding the family and all the heathens that are usually around, the pantry and freezer would be a lot more empty. The only complaints I've heard so far are \”regular chips?\”, \”sour cream?\” and \”cheese?\” … just like that as a question. Like, are you kidding us?
